Cajun Cabbage and Sausage Stir Fry

When I have cabbage on hand (and luckily our cabbage harvest this year was pretty good) I always end up making this stir fry recipe. It's so simple to make, especially on a weeknight when you don't feel like spending hours in the kitchen.

Cajuns will find a way to add smoked sausage to anything.

 

I always grew up eating smoked sausage in gumbo, jambalaya, and sometimes even served with boiled crawfish.  

 

For this recipe, you can either use Andouille or any type of smoked sausage you prefer. I used a hot smoked sausage that I bought at our local farmer’s market.

 

I’m honestly not sure where this recipe came from or if I just threw it together one day, but it has definetely become a staple dinner meal in our house. It takes less than 30 minutes to make and is so juicy and delicious.

Cajun Cabbage and Sausage Stir Fry

Ingredients
  

  • 1 cabbage roughly sliced into pieces
  • 1/2 yellow onion diced
  • 2 pieces bacon
  • 1 1b cajun smoked sausage Cut into 1 inch slices
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp red chili flakes

Instructions
 

  • In a pot, on medium-high heat, cook both bacon slices until crispy. Once the bacon is cooked, remove to a plate with a paper towel.
  • Add your diced onion to the remaining bacon grease in the pot. Cook for 2 minutes, stirring occasionally, until onions are soft.
  • Remove onions to the plate with the bacon.
  • Add your sliced smoked sausage to the pot and cook until pieces are brown on both sides. About 5 minutes.
  • Add the cabbage, bacon, and onion to the pot with the smoked sausage. Pour in about 1/2 cup of water and scrape the bottom of the pot to incorporate the flavors.
  • Add your seasonings: salt, pepper, garlic powder, and chili flakes. Stir.
  • Turn heat down to low and cover. Simmer for about 10-15 minutes, stirring occasionally. Once the cabbage is nice and soft, it's ready!
